  • 4 salmon fillets
  • 1 cup panko breadcrumbs
  • 1 lemon, zest and juice
  • 2 tablespoons olive oil
  • 1 teaspoon dried dill
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

  2. In a shallow bowl, combine the panko breadcrumbs, lemon zest, dried dill, salt, and black pepper.

  3. Drizzle the salmon fillets with lemon juice and then brush them with olive oil.

  4. Dip each salmon fillet into the panko mixture, pressing gently to coat them evenly.

  5. Place the coated salmon fillets on the prepared baking sheet.

  6. Bake for 12-15 minutes, or until the salmon is cooked through and the crust is golden and crispy.

  7. Serve the lemon panko crusted salmon hot, garnished with fresh lemon slices.
