How To Make Hey Presto Paella

Ingredients
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup Arborio rice
- 1 teaspoon saffron threads
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- 3 cups chicken or vegetable broth
- 1 cup diced tomatoes
- 1/2 cup frozen peas
- 8 large shrimp, peeled and deveined
- 8 mussels, scrubbed and debearded
- 1/2 cup cooked chicken, shredded
- Salt and pepper, to taste
- Fresh parsley, for garnish
- Lemon wedges, for serving
Instructions

Heat olive oil in a large paella pan or skillet over medium heat. Add onion, garlic, and bell peppers. Cook until softened, about 5 minutes.

Add rice, saffron, paprika, and turmeric. Stir to coat the rice with the spices and cook for 2 minutes.

Pour in the broth and diced tomatoes. Bring to a simmer and cook for 15 minutes, stirring occasionally.

Add the frozen peas, shrimp, mussels, and cooked chicken. Season with salt and pepper. Cook for an additional 10-15 minutes, or until the rice is cooked and the seafood is cooked through.

Remove from heat and let it sit for 5 minutes to allow the flavors to meld.

Garnish with fresh parsley and serve with lemon wedges.
