Ingredients

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup Arborio rice
  • 1 teaspoon saffron threads
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 3 cups chicken or vegetable broth
  • 1 cup diced tomatoes
  • 1/2 cup frozen peas
  • 8 large shrimp, peeled and deveined
  • 8 mussels, scrubbed and debearded
  • 1/2 cup cooked chicken, shredded
  • Salt and pepper, to taste
  • Fresh parsley, for garnish
  • Lemon wedges, for serving

Instructions

  1. Heat olive oil in a large paella pan or skillet over medium heat. Add onion, garlic, and bell peppers. Cook until softened, about 5 minutes.

  2. Add rice, saffron, paprika, and turmeric. Stir to coat the rice with the spices and cook for 2 minutes.

  3. Pour in the broth and diced tomatoes. Bring to a simmer and cook for 15 minutes, stirring occasionally.

  4. Add the frozen peas, shrimp, mussels, and cooked chicken. Season with salt and pepper. Cook for an additional 10-15 minutes, or until the rice is cooked and the seafood is cooked through.

  5. Remove from heat and let it sit for 5 minutes to allow the flavors to meld.

  6. Garnish with fresh parsley and serve with lemon wedges.
