How To Make Herbed Jersey Royal Crab Cakes

- 1 lb Jersey Royal potatoes, cooked and cooled
- 1 lb lump crab meat
- 1/4 cup mayonnaise
- 2 green onions, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1 tbsp Dijon mustard
- 1 tsp Old Bay seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup breadcrumbs
- 2 tbsp olive oil
- Lemon wedges, for serving
Instructions

In a large bowl, mash the Jersey Royal potatoes until smooth.

Add the crab meat, mayonnaise, green onions, parsley, Dijon mustard, Old Bay seasoning, salt, and black pepper. Mix well to combine.

Shape the mixture into 8 crab cakes, about 3 inches in diameter.

Place the breadcrumbs on a plate and coat each crab cake with breadcrumbs, pressing gently to adhere.

Heat the olive oil in a large skillet over medium heat. Cook the crab cakes for 3-4 minutes per side, until golden brown and heated through.
