How To Make Harissa Salmon with Zesty Couscous

Ingredients
- 4 salmon fillets
- 2 tbsp harissa paste
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper, to taste
- 1 cup couscous
- Zest of 1 lemon
- Juice of 1 lemon
- 2 tbsp chopped fresh cilantro
- 2 tbsp chopped fresh mint
Instructions

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a small bowl, mix together the harissa paste, olive oil, cumin, garlic powder, paprika, salt, and pepper.

Place the salmon fillets on the prepared baking sheet and brush the harissa mixture over the top of each fillet.

Bake the salmon in the preheated oven for 12-15 minutes, or until cooked through and flaky.

While the salmon is baking, cook the couscous according to the package instructions. Once cooked, fluff the couscous with a fork.

In a large bowl, combine the cooked couscous, lemon zest, lemon juice, chopped cilantro, and chopped mint. Mix well.

Serve the harissa salmon over a bed of the zesty couscous.
