  • 4 salmon fillets
  • 2 ripe mangoes, peeled and sliced
  • 8 cups mixed salad greens
  • 1/2 cup shredded coconut
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sliced red onion
  • 1/4 cup lime juice
  • 2 tablespoons fish sauce
  • 2 tablespoons coconut milk
  • 1 tablespoon honey
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat. Season the salmon fillets with salt and pepper.

  2. Grill the salmon for about 4-5 minutes per side, or until cooked through. Remove from heat and let it rest for a few minutes.

  3. In a small bowl, whisk together lime juice, fish sauce, coconut milk, honey, and vegetable oil to make the coconut dressing.

  4. In a large bowl, toss the mixed salad greens, mango slices, shredded coconut, cilantro, and red onion together.

  5. Divide the salad mixture onto 4 plates. Place a grilled salmon fillet on top of each salad bed.

  6. Drizzle the coconut dressing over the salmon and salad. Serve immediately.
