Ingredients
- 4 salmon fillets
- 2 ripe mangoes, peeled and sliced
- 8 cups mixed salad greens
- 1/2 cup shredded coconut
- 1/4 cup chopped fresh cilantro
- 1/4 cup sliced red onion
- 1/4 cup lime juice
- 2 tablespoons fish sauce
- 2 tablespoons coconut milk
- 1 tablespoon honey
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions

Preheat the grill to medium-high heat. Season the salmon fillets with salt and pepper.

Grill the salmon for about 4-5 minutes per side, or until cooked through. Remove from heat and let it rest for a few minutes.

In a small bowl, whisk together lime juice, fish sauce, coconut milk, honey, and vegetable oil to make the coconut dressing.

In a large bowl, toss the mixed salad greens, mango slices, shredded coconut, cilantro, and red onion together.

Divide the salad mixture onto 4 plates. Place a grilled salmon fillet on top of each salad bed.

Drizzle the coconut dressing over the salmon and salad. Serve immediately.
