Baked crab cakes just taste amazingly mouthwatering when you drizzle it with out favorite chipotle lime sauce. It’s so good we just cannot not share it.

Ingredients

For Crab Cakes:

  • 9ozlump crab meat,picked free of shells
  • ½cupRitz crackers,about 13 reduced fat, crushed
  • 1whole egg,plus 1 egg white, beaten
  • 2scallions,finely chopped
  • 2tbspred bell pepper,finely chopped
  • 1tbspmayonnaise,low fat
  • 2tbspcilantro,fresh or parsley
  • ½lime,juiced
  • salt and pepper,to taste
  • cooking spray

For Zesty Chipotle Lime Sauce:

  • 1tbsppeppers,roasted, jarred
  • ¼cuplight mayonnaise
  • 1tspchipotle chilies,minced canned in adobo sauce
  • 1tsplime juice,fresh

Instructions

Red Pepper Chipotle Lime Sauce:

  1. In a small blender, puree mayonnaise, lime juice, roasted pepper and chipotle pepper.

Crab Cakes:

  1. In a large bowl, combine crushed crackers, eggs, scallions, pepper, mayo, cilantro, lime juice, salt and pepper.

  2. Mix well, then fold in crab meat, careful not to over mix so the crab remains in large chunks.

  3. Gently shape into patties using a ½ cup measuring cup.

  4. Chill in the refrigerator at least ½ hour before baking.

  5. Preheat oven to 400 degrees F.

  6. Grease a baking sheet with cooking spray.

  7. Bake about 8 to 10 minutes on each side, until nicely browned.

  8. Drizzle red pepper chipotle lime sauce over crab cakes and serve.
