Ingredients

  • 500g prawns, peeled and deveined
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 can (400ml) coconut milk
  • 1 cup fish or vegetable broth
  • 2 tomatoes, diced
  • 2 tbsp tomato paste
  • 2 tbsp olive oil
  • 1 tbsp palm oil (optional)
  • Juice of 1 lime
  • 2 tbsp chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil (and palm oil if using) over medium heat. Add the onions and garlic, and sauté until fragrant.

  2. Add the bell peppers and cook for another 2-3 minutes until slightly softened.

  3. Stir in the tomato paste and cook for 1 minute.

  4. Add the diced tomatoes, coconut milk, and fish or vegetable broth. Bring to a simmer.

  5. Season with salt and pepper to taste. Add the prawns and cook for 5-6 minutes until they turn pink and opaque.

  6. Stir in the lime juice and chopped cilantro.

  7. Serve hot with rice or crusty bread.
