How To Make Little Pistachio Cakes

Delicious and decadent pistachio cakes that are perfect for a sweet treat.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup ground pistachios
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1/2 cup milk
  • 1/2 tsp vanilla extract
  • 1/4 cup chopped pistachios, for garnish

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.

  2. In a medium bowl, whisk together the flour, ground pistachios, baking powder, and salt.

  3. In a separate large bowl, cream together the butter and sugar until light and fluffy.

  4. Beat in the eggs, one at a time, then stir in the milk and vanilla extract.

  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.

  7. Sprinkle chopped pistachios on top of each cake.

  8. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

  9. Allow the cakes to cool in the muffin tin for 5 minutes, then transfer to a wire rack to cool completely.
