Ingredients

  • 4 chicken thighs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh thyme leaves
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Season the chicken thighs with salt and pepper.

  3. In a large oven-safe skillet, heat the olive oil over medium heat. Add the chicken thighs and cook for 4-5 minutes per side until browned. Remove the chicken from the skillet and set aside.

  4. In the same skillet, add the diced onion and minced garlic. Sauté for 2-3 minutes until softened.

  5. Add the chicken broth, heavy cream, Dijon mustard, and thyme leaves to the skillet. Stir well to combine and bring to a simmer.

  6. Return the chicken thighs to the skillet, nestling them into the sauce. Cover the skillet with a lid or aluminum foil and transfer to the preheated oven.

  7. Bake for 20-25 minutes until the chicken is cooked through and the sauce has thickened.

  8. Remove from the oven and let the chicken rest for a few minutes before serving.

  9. Garnish with fresh parsley and serve hot.
