  • 1 cup gluten-free bread crumbs
  • 1/2 cup cornmeal
  • 1/4 cup gluten-free flour blend
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil


  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. In a shallow dish, combine the gluten-free bread crumbs, cornmeal, gluten-free flour blend, paprika, garlic powder, onion powder, dried thyme, dried oregano, salt, and black pepper. Mix well.

  3. Dip each chicken breast into the olive oil, making sure to coat both sides.

  4. Press each chicken breast firmly into the bread crumb mixture, making sure to cover the entire surface with the coating.

  5. Place the coated chicken breasts onto the prepared baking sheet.

  6. Bake in the preheated oven for 20 minutes, or until the chicken is cooked through and the coating is golden brown.

  7. Serve hot and enjoy!
