How To Make Vegan Meringues

Turning vegan may look challenging for some, especially for those who can’t turn their eyes away from meat. But they just haven’t found these sumptuous vegan recipes that even non-vegans will surely enjoy!

Ingredients

  • 1/2 cup aquafaba (liquid from canned chickpeas)
  • 1/2 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cream of tartar

Instructions

  1. Preheat the oven to 225°F (110°C) and line a baking sheet with parchment paper.

  2. In a clean bowl, beat the aquafaba with an electric mixer on high speed until soft peaks form.

  3. Gradually add the sugar, one tablespoon at a time, while continuing to beat the mixture. Beat until stiff peaks form.

  4. Add the vanilla extract and cream of tartar, and gently fold them into the meringue mixture.

  5. Transfer the meringue mixture into a piping bag fitted with a round tip. Pipe small mounds onto the prepared baking sheet.

  6. Bake in the preheated oven for 90 minutes, or until the meringues are crisp and dry.

  7. Turn off the oven and leave the meringues inside for an additional 30 minutes to cool and dry completely.

  8. Once cooled, remove from the oven and store in an airtight container.
