How To Make Very Veggie and Beef Chili Recipe

Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 bell pepper, diced
  • 2 carrots, diced
  • 1 zucchini, diced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 cup vegetable broth
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro

Instructions

  1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain any excess fat.

  2. Add the diced onion, minced garlic, bell pepper, carrots, and zucchini to the pot. Cook for 5 minutes, stirring occasionally.

  3. Stir in the kidney beans, diced tomatoes, vegetable broth, chili powder, cumin, paprika, salt, and pepper. Bring to a boil.

  4. Reduce heat to low and let the chili simmer for 1 hour, stirring occasionally.

  5. Serve hot with your choice of toppings.
