Preparation: 10 minutes
Cooking: 20 minutes
Total: 30 minutes

Serves:

Ingredients

  • 1 pack of firm tofu
  • 1/2 cup of cornstarch
  • Vegetable oil for frying
  • 1 cup of dashi stock
  • 3 tablespoons of soy sauce
  • 1 tablespoon of mirin
  • 1 teaspoon of sugar
  • 1 tablespoon of grated daikon radish
  • 1 tablespoon of chopped green onion
  • 1/4 teaspoon of grated ginger

Instructions

  1. Drain the tofu and cut it into 8 equal-sized cubes.

  2. Prepare a bowl of cold water and gently place the tofu cubes in it. Let them sit for 5 minutes to remove excess moisture.

  3. Pat the tofu cubes dry with a paper towel and coat them with cornstarch.

  4. Heat vegetable oil in a deep frying pan or pot. Once the oil is hot (around 350°F/180°C), carefully add the tofu cubes and fry until golden brown and crispy.

  5. Remove the tofu cubes from the oil and place them on a paper towel to drain excess oil.

  6. In a separate saucepan, combine dashi stock, soy sauce, mirin, and sugar. Bring to a gentle boil and then reduce the heat.

  7. Place the fried tofu cubes in individual serving bowls and pour the sauce over them.

  8. Garnish with grated daikon radish, chopped green onion, and grated ginger.

  9. Serve the agedashi tofu hot as an appetizer.
