How To Make Oyster Mushroom and Miso Soup

A flavorful and hearty soup with oyster mushrooms and miso paste.

Ingredients

  • 8 oz oyster mushrooms, sliced
  • 4 cups vegetable broth
  • 2 garlic cloves, minced
  • 2 tbsp miso paste
  • 2 green onions, sliced
  • 1 tsp soy sauce
  • 1 tsp sesame oil
  • 1 tbsp olive oil

Instructions

  1. In a pot, heat up olive oil over medium heat.

  2. Add minced garlic and sauté for 1 minute.

  3. Add sliced oyster mushrooms and sauté for 5 minutes.

  4. Pour in vegetable broth and bring to a boil.

  5. Reduce heat and simmer for 10 minutes.

  6. In a small bowl, whisk together miso paste and 1/2 cup of hot broth until smooth.

  7. Add miso mixture, soy sauce, and sesame oil to the pot and stir well.

  8. Turn off heat and let soup sit for 2 minutes.

  9. Serve hot, topped with sliced green onions.
