Ingredients
- 2 sweet potatoes, peeled and sliced into thin rounds
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1 cup cold sparkling water
- Vegetable oil, for frying
- Salt, for seasoning
Instructions

In a large bowl, whisk together flour, cornstarch, baking powder, and salt.

Gradually add cold sparkling water while whisking until the batter becomes smooth.

Heat vegetable oil in a deep pot or fryer to 375°F (190°C).

Dip sweet potato slices into the batter, making sure they are evenly coated.

Carefully place coated slices into the hot oil and fry until golden brown and crispy, about 3-4 minutes.

Using a slotted spoon, transfer tempura to a paper towel-lined plate to drain excess oil.
