Total: 30 minutes

Serves:

Ingredients

  • 1/2 pound squid, cleaned and cut into rings
  • 1 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 teaspoon salt
  • 1 cup ice-cold sparkling water
  • Vegetable oil, for frying
  • Soy sauce, for dipping

Instructions

  1. In a mixing bowl, combine flour, cornstarch, and salt.

  2. Gradually add sparkling water to the dry mixture, stirring until a smooth batter forms.

  3. Heat vegetable oil in a deep saucepan or fryer to 375°F (190°C).

  4. Dip squid rings into the tempura batter, allowing excess batter to drip off.

  5. Carefully place the battered squid into the hot oil, frying in batches for about 2-3 minutes or until golden brown and crispy.

  6. Use a slotted spoon to remove the squid from the oil and transfer to a plate lined with paper towels to drain excess oil.

  7. Serve the tempura squid hot with soy sauce on the side for dipping.
