Ingredients

  • 8 oz udon noodles
  • 4 cups vegetable broth
  • 1/4 cup soy sauce
  • 2 tbsp mirin
  • 2 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 tsp sesame oil
  • 1 cup shiitake mushrooms, sliced
  • 1 cup bok choy, chopped
  • 1/2 cup carrot, julienned
  • 4 green onions, chopped
  • 1/4 cup cilantro, chopped
  • Sesame seeds, for garnish

Instructions

  1. Cook the udon noodles according to package instructions. Drain and set aside.

  2. In a large pot, combine the vegetable broth, soy sauce, mirin, brown sugar, garlic, ginger, and sesame oil. Bring to a simmer over medium heat.

  3. Add the mushrooms, bok choy, and carrot to the broth. Cook for 5-7 minutes until vegetables are tender.

  4. Divide the cooked udon noodles among 4 bowls. Ladle the hot broth and vegetables over the noodles.

  5. Garnish with green onions, cilantro, and sesame seeds.

  6. Serve hot and enjoy!
