Ingredients

  • 1/2 small green cabbage, thinly sliced
  • 2 carrots, grated
  • 1/4 cup rice wine vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 teaspoons sugar
  • 1 teaspoon grated ginger
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped roasted peanuts

Instructions

  1. In a large bowl, combine the sliced cabbage and grated carrots.

  2. In a separate small bowl, whisk together the rice wine vinegar, soy sauce, sesame oil, sugar, and grated ginger until well combined.

  3. Pour the dressing over the cabbage and carrots, and toss to coat evenly.

  4. Let the salad sit for about 10 minutes to allow the flavors to meld together.

  5. Just before serving, sprinkle the chopped fresh cilantro and roasted peanuts over the salad.

  6. Toss again gently to distribute the cilantro and peanuts.

  7. Serve the Japanese-Style Cabbage Salad chilled or at room temperature.
