How To Make Japanese Beef Hot Pot (Sukiyaki)

A classic Japanese dish with sliced beef, vegetables, and noodles cooked in a sweet and savory broth at the table.

Serves:

Ingredients

  • 1 pound thinly sliced beef
  • 1 onion, sliced
  • 1 bunch scallions, cut into 2-inch pieces
  • 1/2 cup sliced shiitake mushrooms
  • 1/2 cup sliced carrots
  • 1/2 cup sliced cabbage
  • 1/4 cup sake
  • 1/4 cup soy sauce
  • 1/4 cup mirin
  • 2 tbsp sugar
  • 2 cups dashi or beef broth
  • 1 pack of udon noodles
  • 1 tbsp vegetable oil
  • 4 raw eggs

Instructions

  1. Heat a large skillet or sukiyaki pan over medium heat and add the vegetable oil.

  2. Cook the sliced beef until browned and set it aside on plates.

  3. In the same skillet, sauté the onions, mushrooms, carrots, cabbage and scallions until softened.

  4. Add the sake, soy sauce, mirin, and sugar to the skillet and let the mixture cook for 2-3 minutes.

  5. Add the dashi or beef broth and bring it to a boil.

  6. Reduce the heat to low and add the sliced beef back to the skillet, as well as the udon noodles.

  7. Let everything simmer together for about 5-7 minutes until the noodles are cooked and the vegetables are tender.

  8. Crack an egg into each serving bowl and pour some of the broth and mixture from the skillet over the egg.

  9. Serve the hot pot with rice.
