Ingredients

  • 1 lb beef chuck, sliced thin
  • 4 cups beef broth
  • 2 tbsp white miso
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 stalks celery, sliced
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 tbsp vegetable oil
  • Salt and pepper, to taste
  • 2 green onions, thinly sliced (for garnish)
  • Cooked rice, for serving

Instructions

  1. Heat vegetable oil in a pot over medium-high heat. Add sliced beef and cook until browned, about 5 minutes.

  2. Add onion, garlic, and ginger and cook for 2-3 minutes until fragrant.

  3. Pour in beef broth and bring to a boil. Reduce heat and simmer for 30 minutes.

  4. Add sliced carrots and celery and continue to simmer for another 20 minutes until vegetables are tender.

  5. In a small bowl, whisk miso with a ladleful of hot broth until smooth. Add miso mixture to the pot and stir to combine.

  6. Remove from heat and season with salt and pepper to taste.

  7. Serve with a sprinkle of sliced green onions and cooked rice.
