Ingredients

  • 2 cups cooked white rice
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup grated mozzarella cheese
  • 1/4 cup chopped fresh parsley
  • 2 eggs
  • 1 cup bread crumbs
  • 1/4 cup vegetable oil
  • 1 cup marinara sauce

Instructions

  1. In a large bowl, combine cooked rice, Parmesan cheese, mozzarella cheese, parsley, and eggs. Mix well.

  2. Take a handful of the rice mixture and form it into a ball. Make an indentation in the center and place a small piece of mozzarella cheese.

  3. Cover the cheese with more rice mixture and form into a ball, sealing the cheese inside.

  4. Roll the rice balls in bread crumbs to coat them evenly.

  5. In a large skillet, heat vegetable oil over medium heat. Fry the rice balls until golden brown on all sides.

  6. Serve the rice balls hot with marinara sauce for dipping.
