  • 4 large Portobello mushrooms, stems removed and diced
  • 2 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • 1 cup of vegetable broth
  • 1/2 cup of heavy cream
  • 1/4 cup of grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

  2. Add the diced Portobello mushrooms to the skillet and cook until they release their moisture and start to brown, about 5 minutes.

  3. Pour in the vegetable broth and bring to a simmer. Cook for an additional 5 minutes, allowing the flavors to meld together.

  4. Reduce heat to low and stir in the heavy cream and grated Parmesan cheese. Cook for another 5 minutes, until the sauce thickens slightly.

  5. Season with salt and pepper to taste.

  6. Remove from heat and serve the Portobello mushroom sauce over your favorite pasta, grilled chicken, or roasted vegetables.
