How To Make Jamie Oliver’s Spaghetti Carbonara Recipe

A classic Italian pasta dish made with spaghetti, eggs, pancetta, parmesan cheese, and black pepper.

Serves:

Ingredients

  • 400g dried spaghetti
  • 150g pancetta, diced
  • 2 garlic cloves, finely sliced
  • 3 large free-range eggs
  • 100g Parmesan cheese, freshly grated
  • salt and freshly ground black pepper

Instructions

  1. Cook spaghetti in a large pot of salted boiling water until al dente.

  2. While spaghetti is cooking, fry pancetta and garlic in a frying pan until pancetta is crispy.

  3. In a small bowl, whisk together eggs and grated Parmesan cheese.

  4. Drain spaghetti and add it to the frying pan with pancetta and garlic. Toss all together well.

  5. Remove from the heat and add the egg and Parmesan mixture, tossing quickly (but gently) to avoid scrambling the egg.

  6. Season with salt and black pepper.

  7. Serve immediately.
