Ingredients

  • 1 cup Arborio rice
  • 4 cups vegetable broth
  • 1/2 cup diced onion
  • 2 cloves garlic, minced

  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Rinse the Arborio rice under cold water and drain.

  2. In the rice cooker, combine the rice, vegetable broth, diced onion, minced garlic, and sliced mushrooms.

  3. Close the rice cooker and set it to the regular cook or risotto setting.

  4. Once the rice cooker switches to warm, stir in the grated Parmesan cheese and butter until melted and creamy.
