  • 2 cups penne pasta, cooked and drained
  • 2 tbsp olive oil
  • ½ cup canned mushrooms, sliced
  • 1 small onion, diced
  • 1 cup baby spinach, chopped
  • 1 cup Roma tomatoes, diced
  • ¼ cup all-purpose flour
  • ½ stick butter
  • 3 cups heavy whipping cream
  • 1 cup Parmesan cheese, shredded
  • ½ cup Asiago cheese, shredded
  • 2 cloves garlic, minced
  • salt
  • pepper, ground


  1. Warm the olive oil in a large skillet over medium-high heat.

  2. Add the mushrooms, onion, and garlic. Sauté until fragrant.

  3. Add the spinach and tomatoes. Stir while cooking.

  4. Melt butter in a separate saucepan. Then, whisk in the flour.

  5. Pour in the cream and bring to a simmer.

  6. Add in Parmesan and Asiago cheeses.

  7. Whisk as the mixture begins to thicken. Season with salt, pepper, and extra garlic.

  8. Toss pasta with sauce and sautéed vegetables. Mix until pasta is evenly coated, then serve!
