Ingredients

  • 1 pork tenderloin (about 1.5 lbs)
  • 8 thin slices of prosciutto
  • 8 fresh sage leaves
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. Season the pork tenderloin with salt and pepper.

  3. Lay the prosciutto slices on a baking sheet, slightly overlapping each other.

  4. Place the seasoned pork tenderloin on top of the prosciutto slices.

  5. Wrap the prosciutto tightly around the pork tenderloin.

  6. Heat olive oil in a large oven-safe skillet over medium-high heat.

  7. Add the wrapped pork tenderloin to the skillet, seam side down.

  8. Sear the pork for 2 minutes on each side until the prosciutto is crispy.

  9. Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).

  10. While the pork is roasting, prepare the crispy sage. Heat 1 tbsp of olive oil in a small skillet over medium heat.

  11. Add the sage leaves and cook for about 1 minute on each side until crispy. Remove from heat and set aside.

  12. Once the pork is cooked, remove it from the oven and let it rest for 5 minutes before slicing.

  13. Serve the sliced pork tenderloin topped with the crispy sage leaves.
