Ingredients

  • 1 pound carrots, peeled and sliced into thin coins
  • 2 tablespoons honey
  • 1 tablespoon fennel seeds
  • 1 tablespoon butter
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Place the sliced carrots in a microwavable dish.

  2. In a small bowl, mix together the honey, fennel seeds, butter, salt, and black pepper.

  3. Pour the honey mixture over the carrots and toss to coat evenly.

  4. Cover the dish with a microwave-safe lid or plastic wrap, leaving a small vent for steam to escape.

  5. Microwave on high for 5 minutes, then stir the carrots.

  6. Microwave for an additional 3-5 minutes, or until the carrots are tender.

  7. Remove from the microwave and let the carrots rest for a few minutes.

  8. Serve hot, garnished with fresh parsley.
