Five-Ingredient Boiled Carrots Recipe

Boiled vegetables are one of those side dishes that deserve more love! Every time there’s some roasted meat or a pasta dish, I always prefer the vegetable side dish option. It’s healthier, lighter, and much tastier to pair with the entrees. One of my favorite side dishes is perfectly seasoned boiled carrots that’s crisp and tender.

It’s so easy to make this delicious side dish. I made mine in just 10 minutes which is perfect for when you’re rushing to make a quick and healthy snack or side dish. You can even adjust or change the seasonings to your liking. For my boiled carrots recipe, I started with the classic seasonings such as kosher salt and butter (or olive oil) with chopped chives for added taste. Aside from the chives, you can also mix in other fresh herbs like thyme, basil, oregano, or dill for a more distinct flavor and aroma. 

I also added maple syrup as an optional topping to drizzle all over the boiled carrot side dish. Maple-glazed boiled sweet carrots were a treat I’ve tried before. They were like bright orange candied carrots, and they tasted amazing. There are also other seasonings you can use like ranch seasoning, or Greek seasoning which features a flavor combination of oregano, dill, garlic powder, and onion powder. All of these seasoning options pair well with the tender boiled carrots

Once I had all of my ingredients, I washed my whole carrots, sliced them diagonally, then prepped the sliced carrots for boiling. If you’re wondering how long to boil carrots, the ideal time is about 4 to 5 minutes. Any more than that and your carrots will be mushy. After boiling them, drain the water and transfer to a large bowl. Add in the seasonings, mix, and then you’re done! 

I ate these alongside tasty grilled chicken tenders, but you can also pair it with any kind of roast meat. Vegetable side dishes like this boiled carrot really completes the meal for me. 

How To Make Boiled Carrots

Enjoy deliciously seasoned boiled carrots in just 10 minutes with this quick and simple side dish recipe which only needs 5 ingredients.

Ingredients

  • 1 lb carrots, (or 2½ cups), sliced, or baby carrots
  • 1 tbsp olive oil, or butter
  • ¼ tsp kosher salt, plus 1 pinch
  • tbsp chives, chopped, or minced green onion tops
  • ½ tsp maple syrup, optional
  • ground black pepper, to taste, optional

Instructions

  1. Start a saucepan of water to boil.
  2. Peel and slice the carrots into ¼-inch slices on the bias (diagonally).

  3. Once the water is boiling, add the carrots. Boil carrots for 4 to 5 minutes until just crisp tender (longer if more tender dish is desired). Drain.

  4. Toss the carrots with the chives, butter and salt. Taste and add additional salt and pepper, if desired. Enjoy!
