Ingredients

  • 2 cups dried pinto beans
  • 6 cups water
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 jalapeno pepper, seeded and diced
  • 1 tsp cumin
  • 1 tbsp chili powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup chopped fresh cilantro, for garnish

Instructions

  1. Rinse the pinto beans and remove any debris. Soak the beans overnight in water.

  2. Drain and rinse the soaked beans. In a large pot, combine the beans, water, diced onion, minced garlic, jalapeno pepper, cumin, chili powder, salt, and black pepper.

  3. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours, or until the beans are tender.

  4. Remove from heat and let the beans cool slightly. Use a fork or potato masher to mash some of the beans to thicken the sauce.

  5. Serve the Texas pinto beans hot, topped with chopped fresh cilantro.
