How To Make South African Potato Salad

Ingredients
- 4 large potatoes, peeled and cubed
- 2 large eggs
- 1 cup mayonnaise
- 2 tablespoons mustard
- 1 tablespoon white vinegar
- 1 red onion, finely chopped
- 1 red bell pepper, diced
- 2 dill pickles, diced
- 2 tablespoons freshly chopped parsley
- Salt and pepper to taste
Instructions

Boil the potatoes in salted water until fork-tender. Drain and let cool.

Boil the eggs until hard-boiled, approximately 10-12 minutes. Peel and chop into small pieces.

In a large bowl, combine mayonnaise, mustard, and vinegar. Mix well.

Add the cooled potatoes, chopped eggs, red onion, red bell pepper, dill pickles, and parsley to the bowl. Gently fold everything together until well coated.

Season with salt and pepper to taste.

Refrigerate for at least 1 hour before serving to allow flavors to meld.
