Ingredients

  • 4 large carrots, peeled and sliced into rounds
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup orange juice
  • 1/4 cup raisins
  • 1/4 cup chopped walnuts

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large bowl, combine the carrots, honey, olive oil, cinnamon, ginger, nutmeg, and salt. Mix well to coat the carrots evenly.

  3. Transfer the carrot mixture to a baking dish and spread it out in an even layer.

  4. Pour the orange juice over the carrots and sprinkle the raisins and chopped walnuts on top.

  5. Cover the baking dish with foil and bake for 30 minutes.

  6. Remove the foil and bake for an additional 15 minutes, or until the carrots are tender and caramelized.

  7. Serve the carrot tzimmes hot as a side dish.
