Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups chicken or vegetable broth

Instructions

  1. In a large saucepan, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent.

  2. Sprinkle the flour, chili powder, cumin, oregano, salt, and black pepper over the onions and garlic. Stir well to combine and cook for about 1 minute to toast the spices.

  3. Gradually pour in the chicken or vegetable broth, stirring constantly to prevent lumps. Continue to cook, stirring occasionally, until the gravy thickens, about 10-15 minutes.

  4. Once the gravy has thickened to your desired consistency, remove from heat and serve hot.
