Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cans (15 oz each) pinto beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup beef broth
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional toppings: shredded cheese, sour cream, chopped cilantro

Instructions

  1. In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain any excess fat.

  2. Add the diced onion and minced garlic to the pot and cook for an additional 3-4 minutes, until the onion is softened.

  3. Stir in the pinto beans, diced tomatoes, beef broth, chili powder, cumin, salt, and black pepper.

  4. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 1 hour, stirring occasionally.

  5. Serve hot, topped with your choice of shredded cheese, sour cream, and chopped cilantro.
