  • 1 cup cornmeal
  • 1 cup all-purpose flour

  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1/4 cup melted butter
  • 1/2 cup canned corn kernels, drained
  • 1/4 cup chopped green onions

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch square baking dish.

  2. In a large mixing bowl, combine the cornmeal, flour, sugar, baking powder, and salt.

  3. In a separate bowl, whisk together the milk, vegetable oil, and melted butter.

  4. Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Then fold in the corn kernels and green onions.
