Cheese Enchiladas Recipe

Enchiladas are a favorite Mexican dish and make great party food. A must for cheese fans and nothing goes better with a margarita!

Ingredients

  • 4 cup Monterey Jack cheese, shredded
  • 2 cup cheddar cheese, shredded
  • 2 medium onions, chopped
  • 1 cup sour cream , or plain yogurt
  • 1 cup green bell peppers, chopped
  • 45 oz tomato sauce
  • 4 tbsp fresh parsley, chopped
  • 1/2 tbsp dried oregano
  • 18 flour tortillas
  • 3 tbsp chili powder
  • 3/4 tbsp ground cumin
  • 1/2 tbsp pepper
  • 2 cloves garlic, finely chopped

Instructions

  1. Grease Dutch oven.

  2. Mix the Monterey Jack, cheddar cheese, 1/2 onion (chopped), sour cream, parsley and pepper in a large bowl

  3. Spoon about 1/3-1/2 C. of the mixture onto each tortilla around filling, and face seam side down.

  4. Mix remaining ingredients (except cheese). Pour over enchiladas.

  5. Sprinkle with remaining cheese. Bake until hot and bubbly.
