Ingredients

  • 1 lb smoked sausage, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 celery stalks, chopped
  • 1 green bell pepper, diced
  • 2 cans (15 oz) red kidney beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1/2 tsp cayenne pepper (optional)
  • Salt and pepper to taste
  • 2 cups cooked white rice
  • Chopped green onions, for garnish

Instructions

  1. In a large skillet or Dutch oven, cook the sliced smoked sausage over medium heat until browned. Remove from the skillet and set aside.

  2. In the same skillet, add the diced onion, minced garlic, chopped celery, and diced green bell pepper. Cook until the vegetables are softened, about 5 minutes.

  3. Add the drained and rinsed red kidney beans, diced tomatoes, chicken broth, paprika, dried thyme, cayenne pepper (if using), salt, and pepper. Stir to combine.

  4. Return the cooked smoked sausage to the skillet and mix well with the bean mixture. Bring the mixture to a simmer and let it cook for about 30 minutes, stirring occasionally.

  5. Serve the smoked sausage and red beans over cooked white rice. Garnish with chopped green onions.
