Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup long grain rice
  • 2 cups beef broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.

  2. In a large skillet, cook ground beef, onion, and garlic until beef is no longer pink. Drain any excess fat.

  3. Stir in rice, beef broth, diced tomatoes, Italian seasoning, salt, and black pepper. Bring to a boil, then reduce heat to low. Cover and simmer for 15 minutes, or until rice is cooked.

  4. Transfer the beef and rice mixture into the prepared baking dish. Sprinkle shredded cheddar cheese evenly over the top.

  5. Bake in the preheated oven for 20 minutes, or until cheese is melted and bubbly.

  6. Remove from the oven and let it cool for a few minutes before serving.
