Ingredients

  • 8 corn tortillas
  • 1 pound ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (15 ounces) enchilada sauce
  • 2 cups shredded Mexican blend cheese
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9×9-inch (23×23 cm) baking dish.

  2. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.

  3. Add the diced onion and minced garlic to the skillet with the ground beef. Cook for 2-3 minutes until the onion is softened.

  4. Stir in the chili powder, cumin, paprika, salt, and black pepper. Cook for an additional 2-3 minutes to allow the spices to blend.

  5. Spread a thin layer of enchilada sauce on the bottom of the prepared baking dish. Place 4 corn tortillas on top, overlapping slightly to cover the bottom.

  6. Spoon half of the ground beef mixture over the tortillas. Top with half of the cheese and half of the remaining enchilada sauce.

  7. Repeat the layers with the remaining tortillas, ground beef mixture, cheese, and enchilada sauce.

  8. Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.

  9. Remove from the oven and let it cool for a few minutes. Garnish with chopped cilantro.

  10. Slice and serve the Enchilada Lasagna hot.
