Ingredients
- 4 large carrots, peeled and diced
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves of garlic, minced
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp paprika
- 1/4 tsp ground cinnamon
- 1/2 cup vegetable broth
- 1/2 cup bread crumbs
- Salt and pepper to taste
Instructions

Preheat the oven to 375°F (190°C).

In a large skillet, heat the olive oil over medium heat. Add the diced carrots, onion, and garlic. Sauté for 5 minutes until the vegetables are slightly softened.

Stir in the ground cumin, ground coriander, paprika, and ground cinnamon. Cook for an additional 2 minutes to enhance the flavors.

Pour in the vegetable broth and bring to a simmer. Cook for 5 minutes until the carrots are tender.

Transfer the mixture to a casserole dish and spread it evenly.

In a small bowl, mix the bread crumbs with salt and pepper. Sprinkle the bread crumb mixture over the carrot mixture.

Bake in the preheated oven for 25-30 minutes until the casserole is bubbling and the bread crumbs are golden brown.
