Ingredients

  • 4 large carrots, peeled and diced
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/2 tsp paprika
  • 1/4 tsp ground cinnamon
  • 1/2 cup vegetable broth
  • 1/2 cup bread crumbs
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large skillet, heat the olive oil over medium heat. Add the diced carrots, onion, and garlic. Sauté for 5 minutes until the vegetables are slightly softened.

  3. Stir in the ground cumin, ground coriander, paprika, and ground cinnamon. Cook for an additional 2 minutes to enhance the flavors.

  4. Pour in the vegetable broth and bring to a simmer. Cook for 5 minutes until the carrots are tender.

  5. Transfer the mixture to a casserole dish and spread it evenly.

  6. In a small bowl, mix the bread crumbs with salt and pepper. Sprinkle the bread crumb mixture over the carrot mixture.

  7. Bake in the preheated oven for 25-30 minutes until the casserole is bubbling and the bread crumbs are golden brown.

  8. Remove from the oven and let it cool for a few minutes before serving.
