Ingredients

  • 1 cup polenta
  • 4 cups water
  • 1 tsp salt
  • 2 tomatoes, sliced
  • 1/2 cup grated Parmesan cheese
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large saucepan, bring the water to a boil. Slowly pour in the polenta, whisking constantly to avoid lumps. Add salt and continue stirring until the polenta thickens, about 5 minutes.

  3. Remove the polenta from the heat and pour it into a greased baking dish. Smooth the surface with a spatula.

  4. Arrange the tomato slices on top of the polenta. Sprinkle with grated Parmesan cheese.

  5. Bake in the preheated oven for 30-35 minutes, or until the polenta is golden and the tomatoes are softened.

  6. Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.
