How To Make Simple Sausage Casserole

Ingredients

  • 8 sausages
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 can (400g) of chopped tomatoes
  • 1 can (400g) of white beans, drained and rinsed
  • 1 cup of chicken or vegetable broth
  • 1 tsp of dried thyme
  • 1 tsp of dried rosemary
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. In a large oven-safe skillet or casserole dish, cook the sausages over medium heat until browned. Remove them from the skillet and set aside.

  3. In the same skillet, sauté the onion and garlic until translucent and fragrant.

  4. Add the chopped tomatoes, white beans, broth, dried thyme, and dried rosemary to the skillet. Season with salt and pepper.

  5. Return the sausages to the skillet, nestling them in the tomato and bean mixture.

  6. Cover the skillet or casserole dish with a lid or aluminum foil and transfer it to the preheated oven.

  7. Bake for 40 minutes, then remove the lid or foil and bake for an additional 15-20 minutes, or until the sausages are cooked through and the sauce has thickened.

  8. Garnish with fresh parsley and serve hot.
