How To Make Lower-Calorie Creamy Chicken Casserole

Ingredients
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 cup low-fat Greek yogurt
- 1 cup reduced-sodium chicken broth
- 1 cup frozen peas
- 1 cup sliced mushrooms
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
Instructions

Preheat the oven to 375°F (190°C).

Heat the olive oil in a large skillet over medium heat. Add the chicken and cook until browned on all sides. Remove from the skillet and set aside.

In the same skillet, add the diced onion and minced garlic. Cook until the onion is translucent and fragrant, about 5 minutes.

Add the Greek yogurt, chicken broth, frozen peas, sliced mushrooms, dried thyme, salt, and black pepper to the skillet. Stir well to combine.

Return the chicken to the skillet and stir to coat it in the creamy mixture. Cook for an additional 5 minutes.

Transfer the mixture to a casserole dish. Sprinkle the grated Parmesan cheese and breadcrumbs evenly over the top.

Bake in the preheated oven for 25 minutes, or until the casserole is bubbling and the breadcrumbs are golden brown.
