Ingredients

  • 2 cups cooked rice
  • 2 chicken breasts, cooked and shredded
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a mix)
  • Fresh cilantro, chopped, for garnish
  • Lime wedges, for serving

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large skillet, sauté the peppers, onion, and garlic over medium heat until soft and slightly charred.

  3. Add the shredded chicken, chili powder, cumin, paprika, salt, and black pepper. Mix well to combine.

  4. In a greased casserole dish, layer half of the cooked rice, followed by half of the chicken and pepper mixture. Repeat the layers.

  5. Sprinkle the shredded cheese evenly over the top of the casserole.

  6. Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.

  7. Garnish with fresh cilantro and serve with lime wedges.
