How To Make Rappie Pie

Ingredients

  • 5 large potatoes
  • 1 onion, finely chopped
  • 1 pound of meat (chicken, beef, or pork), cooked and shredded
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. Peel and grate the potatoes. Squeeze out any excess moisture.

  2. In a large mixing bowl, combine the grated potatoes, chopped onion, shredded meat, salt, and pepper.

  3. Heat vegetable oil in a large skillet over medium heat.

  4. Take a handful of the potato mixture and press it into the hot oil, forming a thin pancake-like layer. Repeat with the remaining mixture.

  5. Cook each side of the potato pancake for about 5 minutes, or until golden brown and crispy. Remove from the skillet and set aside.

  6. Preheat the oven to 350°F (175°C).

  7. Layer the cooked potato pancakes in a greased baking dish, pressing them down firmly.

  8. Cover the baking dish with aluminum foil and bake for 2 hours.

  9. Remove the foil and continue baking for another hour, or until the top is crispy and golden brown.

  10. Allow the Rappie Pie to cool for a few minutes before serving. Serve with your favorite sauce or gravy.
