How To Make Chicken and Black Bean Casserole

Ingredients

  • 2 boneless, skinless chicken breasts, diced
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a casserole dish with cooking spray.

  2. In a large skillet, heat some oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.

  3. In the same skillet, add the diced onion and minced garlic. Sauté until the onion is translucent and fragrant, about 2-3 minutes.

  4. Add the black beans, corn, cumin, chili powder, salt, and black pepper to the skillet. Stir well to combine all the ingredients.

  5. Return the cooked chicken to the skillet and mix with the bean and corn mixture. Cook for an additional 2-3 minutes, allowing the flavors to meld together.

  6. Transfer the mixture to the greased casserole dish and spread it out evenly.

  7. Sprinkle the shredded cheddar cheese on top of the casserole.

  8. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and golden.

  9. Remove from the oven and garnish with chopped fresh cilantro before serving.
