Ingredients

  • 8 ounces of pasta (spaghetti or penne)
  • 1 can of tuna, drained
  • 1/4 cup of olive oil
  • 3 cloves of garlic, minced
  • 1/2 teaspoon of red pepper flakes
  • 14 ounces of diced tomatoes
  • 1/4 cup of chopped parsley
  • Salt and pepper, to taste
  • Grated Parmesan cheese, for serving

Instructions

  1. Cook the pasta according to the package instructions. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes. Cook for 1-2 minutes until the garlic is fragrant.

  3. Add the drained tuna to the skillet and break it up with a fork. Cook for 2-3 minutes until the tuna is heated through.

  4. Stir in the diced tomatoes and simmer for 5 minutes.

  5. Add the cooked pasta to the skillet and toss to coat it with the tuna and tomato sauce. Cook for an additional 2-3 minutes until everything is heated through.

  6. Stir in the chopped parsley and season with salt and pepper to taste.

  7. Serve the tuna pasta hot, garnished with grated Parmesan cheese.
