Ingredients

  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 zucchini, chopped
  • 1 red onion, chopped
  • 2 tbsp olive oil
  • Salt and pepper
  • 1 lb penne pasta
  • 1/4 cup grated parmesan cheese
  • 2 tbsp chopped fresh parsley

Instructions

  1. Preheat oven to 400°F.

  2. Toss peppers, zucchini, and onion with olive oil, salt, and pepper. Roast in preheated oven for 20-25 minutes, stirring once halfway through.

  3. Cook penne according to package instructions.

  4. Toss cooked pasta with roasted vegetables and grated parmesan cheese.
