Ingredients

  • 1 cup orzo pasta
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup kalamata olives, chopped
  • 1/4 cup crumbled feta cheese
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions

  1. Cook orzo according to package instructions, then drain and rinse with cold water.

  2. In a large bowl, combine the cooked orzo, cherry tomatoes, cucumber, red onion, kalamata olives, and feta cheese.

  3. In a small bowl, whisk together the olive oil, lemon juice, honey, garlic, salt, and pepper to make the dressing.

  4. Pour the dressing over the salad and toss to combine.

  5. Serve immediately or keep refrigerated until ready to serve.
