Ingredients

  • 8 oz pappardelle noodles
  • 1 lb crab meat
  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 4 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Cook the pappardelle noodles according to package instructions. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1-2 minutes.

  3. Add the crab meat and asparagus to the skillet. Cook for 5-6 minutes, until the asparagus is tender and the crab meat is heated through.

  4. Pour in the chicken broth and bring to a simmer.

  5. Stir in the heavy cream and Parmesan cheese. Cook for an additional 2-3 minutes, until the sauce thickens slightly.

  6. Season with salt and pepper to taste.

  7. Add the cooked pappardelle noodles to the skillet and toss to coat them in the sauce.

  8. Garnish with fresh parsley and serve hot.
