How To Make Fideo (Mexican Spaghetti)

Ingredients

  • 8 oz fideo pasta
  • 2 tbsp vegetable oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 jalapeno, seeded and minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chicken or vegetable broth
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat. Add the fideo pasta and cook until golden brown, stirring frequently.

  2. Add the diced onions, minced garlic, and jalapeno to the skillet. Cook until the vegetables are softened.

  3. Stir in the diced tomatoes, chicken or vegetable broth, chili powder, cumin, dried oregano, salt, and pepper. Bring the mixture to a simmer.

  4. Reduce the heat to low, cover the skillet, and let the fideo simmer for about 10-12 minutes, or until the pasta is cooked to your desired texture.

  5. Remove from heat and let the fideo rest for a few minutes before serving. Garnish with fresh cilantro and serve with lime wedges.
